About Monte Carlo Rubis
VINIFICATION
The grapes are hand-harvested during the cool early morning hours to preserve their fruitiness and ensure a well-balanced wine. The traditional vinification process takes place in stainless steel vats, where a carefully controlled maceration extracts the perfect balance of colour, fruit, and fine tannins. This meticulous method enhances the wine’s freshness and aromatic complexity, making it a standout red of the region.

Monte Carlo Rubis pairs beautifully with a variety of dishes:
• Grilled or roasted meats, such as lamb, duck breast, or roasted poultry.
• Pigeon or pork tenderloin with figs
• Provençal stuffed vegetables or a classic tian of vegetables.

TERROIR
Coming from the Pierrefeu region in the centre of the Var, this red wine is born on an argilo-limestone terroir, which provides the ideal environment for the natural balance between freshness and grape maturity. The sunny, Mediterranean climate, tempered by the Mistral wind, ensures an excellent concentration of aromas and flavours, giving this wine its distinctive character.
AGEING & SERVING
For optimal enjoyment, it is recommended to drink Monte Carlo Rubis young or within 4 to 5 years to enjoy its vibrant fruitiness and balance. Serve slightly chilled, between 14°C-16°C (57–61°F), particularly in summer or with Mediterranean dishes, to bring out its full aromatic potential.

GRAPES
• Syrah (60%): A truly structuring grape variety, it lends the wine a deep, intense color and a beautiful aromatic concentration marked by black fruits, violet, and spices. It also provides an elegant tannic framework and remarkable ageing potential.
• Grenache (20%): A generous variety that brings roundness and indulgence to the wine. It enhances aromas of ripe red fruits such as strawberry and cherry, while adding pleasant warmth and a silky texture on the palate.
• Carignan (20%): An emblematic grape of the South, it contributes natural freshness and supple tannins. Its typical notes of garrigue and Mediterranean herbs enrich the aromatic complexity while reinforcing the wine’s liveliness and overall balance.
