About Monte Carlo Prosecco D.O.C Extra Dry
VINIFICATION
Hand-harvested in the cool early hours, Glera and Pinot Noir grapes from Veneto and Friuli Venezia Giulia are vinified separately with care. The Glera is gently pressed and cold-settled before slow fermentation in stainless steel to keep its pear and white blossom notes.
The Pinot Noir is softly pressed and briefly macerated to extract its pink hue and red berry aromas. The base wines are blended and undergo a second fermentation in sealed tanks via the Charmat method, producing a fine mousse. Cold stabilisation and gentle filtration preserve freshness, resulting in a luminous, crisp Brut Rosé with floral delicacy and vibrant fruit.
